Cora has extensive training as a baker and pastry chef through the French Culinary Institute, NYC and through various certification courses including sugar art taught by Kerry Vincent.
Before striking out on her own, Cora had the great experience of working with Jacque Torres at his prestigious chocolate shop in New York City, she then went on to hone her skills locally at Hotel Sofitel and Byerly's as well as other grocery chains and bake shops.
One thing that Cora saw was missing, even at some of the most upscale bakeries and shops, was truly home-made cakes made from scratch. Most bakeries and grocery stores made their cakes from a mix, or received the cakes frozen from a mass producer.
Cora made the decision to open her own shop, decorating cakes with flair and style and making cakes and other fine baked goods to order with fresh and wholesome ingredients.
Cakes by Cora was born, a truly from-scratch bakery where there are no mixes and no mass produced frozen cakes, just great dessert items made from scratch and hand-decorated to order.

Due to pressing economic times I have decided to retire Cakes by Cora come 2010. I want to take the time to thank all of you who have made the past year possible and one I will never forget. I loved creating all the cakes and cookies that have brought smiles to all your faces, through all your special occasions.
